Uncertainty and search of clarity

As we have officially almost finished one month in 2021 and said our goodbyes to 2020, a year of complete uncertainties. I’m contemplating of doing the unthinkable. This last year has taken a toll on my mental health. As it has on the whole world. And being a workaholic does not quite fix things either.

Before I could even drive I started working. My first job, you guessed it; working at a pizza place. I gave almost a decade of my life to that place. Don’t get me wrong free pizza is both a blessing and a curse lol. I don’t regret it, although it was tedious and mundane. I’ve learned a lot from it and not just how to cut and box a pizza in under a minute. Skills and knowledge that can be transferred to my current and future endeavors.

I know one thing for sure is that I no longer want the mundane life. I want my life to be more fulfilling and meaningful. Today I set my intentions high and start the unthinkable. Live life fearlessly. Outside of all that comforts me. To stop living in fear of what others may think.

Yes it definitely will be scary and very uncertain. I just believe that I need to start doing things for my own well-being. So I hereby commit to the unknown in search of my own clarity. Are ya gonna follow along?

3 Summer Recipes

Sadly summer is expeditiously coming to an end. I don’t know about you but I’m still in denial. What does one in denial do? Pay tribute with an end of summer celebration of course! With all get togethers there’s usually food and beverages. Here are my three easy recipes to help you go out with a bang!

BLT & avocado dip:


•romaine lettuce •tomatoes •avocado •turkey bacon bits •light mayo •fat free cream cheese •non fat greek yogurt

Combine one cup mayo, one cup of yogurt, and one package of cream cheese. Whisk until smooth and chill.

Chop/dice handful of tomatoes, lettuce, and avocado. Garnish dip with chopped ingredients and bacon bits.

Pink lemonade moscato:


•pink moscato •lemonade •strawberry/raspberry vodka •lemons •strawberries •raspberries

Combine one bottle of wine, six cups of lemonade, and three ounces of vodka.

Slice a handful of strawberries and two lemons. Stir in a handful of raspberries, strawberries, and lemons in the mixture. Chill over night and serve.

Strawberry cheesecake trifle:


•whipped cream •non fat greek yogurt •cheesecake flavored pudding mix •strawberries •angel food cake

Combine twelve ounces of whipped cream, one cup of yogurt, and one box of pudding mix. Once smooth mixture is reached, chill for two hours.

Chop/slice strawberries and cake into small pieces. Layer cake, cheesecake mixture, and strawberries randomly. Enjoy.
